The 2012 Chateau de Campuget, Rhone, France ($9 per glass) is one of our most versatile selections. A classic blend of Syrah and Grenache, this wine is a great starter, and with the perfect balance of red raspberry
followed by bright acidity, it pairs with an array of our menu items. Try it with the Ahi Tuna Tartare, or our Crab Stuffed Shrimp.
There are very few things that signify a celebration like a chilled glass of bubbly, sparkling wine! For nearly 30 years the folks at Domaine Chandon have been there to assist, with their NV Étoilé, Brut Rosé, California ($16 per glass). Étoilé, French for star, is produced with traditional varietals used for
sparkling wine, while also implementing creative techniques, such as sur lie ageing, which creates a harmonious balance of power and elegance. Start your celebration off right with a glass of Étoilé.
From a tiny wine-growing region in southwestern France, just east of the town of Marseille, is produced one of my all-time favorite rosés. The 2012 Domaine Tempier, Bandol, France ($88 per bottle) is a blend of Mourvedre, Grenache, Cinsault, and Carignan that is hand-harvested from mature vines in very small vineyard plots. The intense salmon color is a beautiful introduction to the vibrant
aromas of fresh strawberry followed with subtle hints of rosemary and garrigue. Full bodied and deceivingly powerful on the palate, the wine can
hold its own with a wide array of dishes, but I would recommend this bottle with our Olive Oil Poached Alaskan Halibut.
