This month we’ll be exploring Burgundy, France, home to some
of the finest red and white wines in the world.

through the 27th:
In my opinion, Chablis is beyond compare when it comes to
the pristine production of Chardonnay. Known
for their Kimmeridgian soil, which gives the wines bright and racy characteristics, the Domaine William Fevre, Chablis, France
($10 6oz) is the perfect glass of wine for nearly any shellfish dish. With
hints of crisp citrus, vibrant mineral notes, and light acidity, this
delectable wine pairs beautifully with our oysters on the half shell.
Not unlike in Chablis, neighboring Meursault also uses the
Chardonnay grape exclusively in white wine production; however, the difference
in terroir provides a distinctly different end result. Rich and powerful aromas of mayflower and
hazelnut characterize the Bouchard Père & Fils, Les Clous,
Meursault, France ($14 3oz / $28 6oz) . Full on the palate with a light minerality, the wine maintains a crisp
finish, creating a great match for our Dover Sole with Brown Butter Sauce.
The term Beaujolais is typically associated with light and
simple wines meant to be consumed immediately upon release. Not anymore!
This region has gone through a renaissance of sorts, now producing wines
with finesse and complexity that offer a refreshing alternative to Pinot Noir.
Produced from 100% Gamay, the Villa
Ponciago, La Reserve, Fleurie, France ($9 6oz) offers notes of fresh red raspberry and
cranberry, followed by subtle herbaceousness and bright acidity. While this wine is highly versatile and can
be paired with many different foods, I would recommend you try a glass with our
Salmon Au Poivre.
From the famed and highly regarded Premier Cru Les Greves
appellation in the heart of the Beaune wine region, the Bouchard Père & Fils, Grèves Vigne de l’Enfant Jesus, Beaune,
France ($19 3oz / $38 6oz) is produced from hand-picked fruit that has
been meticulously sorted to select only the finest grapes. Inviting aromas of
cherry, raspberry, and plum are reinforced on the palate. A harmonious finish
of acidity and finely grained tannin partner well with our Signature
Porterhouse Steak.
Wine Tip: The delicate flavors of Burgundy wines are
best enjoyed in their own signature Burgundy wine glass. With a medium-wide bowl and a tapered lip,
these glasses allow for optimal aeration and enjoyment.
