Sips & Tips for Joe's Seafood, Prime Steak & Stone Crab

This month we’re featuring one of our favorite winemakers in Napa Valley, Steve Matthiasson. Visit us August 20-26 to taste why Napa Valley is one of the finest wine regions in the world.

In just a few short years, Steve Matthiasson has developed a loyal following from wine lovers for his hands-off approach to winemaking and preservation of variety identity. Completely in tune with their environment, while realistic about the intangibles of being a farmer, the wines are as unique as their cultivator. The 2017 Matthiasson, Chardonnay, Linda Vista Vineyard, Napa Valley, California ($8 per 3oz / $16 per 6oz) is sourced from a certified organic vineyard directly behind the Matthiasson’s home in the Oak Knoll region of Napa Valley.  The grapes are cooled by maritime winds from the San Pablo Bay to preserve freshness and acidity, while achieving adequate ripeness on the sun-kissed Napa Valley floor. Aromatic notes of golden delicious apples and melon pave the way to a palate packed with ripe stone fruit.  Pair it with our Herb-Roasted Chicken.

As you probably know, Cabernet is king in Napa Valley, as too is the case for Joe’s. We move an incredible amount on a nightly basis, and the Matthiasson, Cabernet Sauvignon, Napa Valley, California ($15 per 3oz / $30 per 6oz) is one of our favorites.  A staple on the list at Joe’s and in the Matthiasson portfolio, the wine is sourced from a range of vineyards throughout Napa, and is blended with a small percentage of Merlot, Cabernet Franc and Petit Verdot. Abundant red fruit on the nose, the wine is fresh and lively. Cranberry and herbal notes dance on the palate forming an incredible pairing for our Signature Bone-In Rib Eye.

Wine Tip: Need to quickly chill a bottle of wine? Wrap your wine bottle in damp paper towels and stick it in the freezer for 15 minutes. This is one of the easiest tricks for rapid-cooling!
